I have replacement covers/lenses for my 1995 BMW as the plastic ones are old and yellow. What is the easiest way to get the old ones out? Do I have to removes the 3-screw harness to get the new ones in?

A lot of guides that tell you how to fit the "angel eyes" onto the headlights inside the casing, will explain how to take apart the lens cover.
No idea which BMW you own, 3, 5, 7 series [not all of them are setup the same!]?
